These Apple Turnovers are filled with a sweet and tart homemade apple filling and wrapped in flaky puff pastry. They are an easy and delicious treat that is best enjoyed any time!

Easy Apple Turnover Recipe

If you love apple pie, you are going to love these apple turnovers. They are golden brown and crispy on the outside and filled with a delicious homemade filling of granny smith apples. I like to make baked goods with granny smith apples the best because they are tart and slightly firm. Their flavor perfectly balances out the sweetness of the other ingredients and they stand up to cooking without becoming mushy. These turnovers are so easy to make! The main ingredients are fresh apples and puff pastry. My kids like to help make them, too. I think it’s because they want to know how soon they can taste test!

Recipe Ingredients

These are all of the ingredients to make these amazing apple turnovers with puff pastry. You don’t have to break the bank to create tasty desserts!

For the apple turnovers

  • Granny Smith apples: The tart flavor of Granny Smith apples pairs wonderfully with the sugar and cinnamon. If you are not a fan, try this recipe with Honeycrisp or Gala apples instead. They both are sweeter varieties that are great for baking.
  • Sugar: I use simple white granulated sugar in this recipe. Feel free to use brown sugar if you like.
  • Cornstarch: The cornstarch thickens the filling so it doesn’t run outside of the puff pastry.
  • Cinnamon: Apples and cinnamon are the perfect combination. It’s one of my favorite ingredients to add to apple desserts. It adds a nice warmth and sweetness to the apple turnover filling.
  • Puff pastry: One of my favorite shortcuts is using store-bought puff pastry. It’s so easy to work with and gives you the same result as if you were using homemade pie crust.
  • Egg yolk: This is what I use to brush on the outside of the turnovers as well as seal them. Not only does it help them achieve a golden brown on top, but it also acts as a glue to keep the edges together.

For the glaze

  • Powdered sugar: This will give you sweetness in the glaze without the gritty taste you get from uncooked granulated sugar. 
  • Milk: You can use whole, 2%, or even your favorite plant-based milk for this. This ingredient is what makes the glaze nice and creamy.

How to Make Apple Turnovers

Making these apple turnovers is easier than ever! With the prepared puff pastry and super quick homemade apple filling, it takes minimal time to prepare without skimping on flavor.

  • Prepare the oven and baking sheet. Preheat your oven to 425 degrees F and line a baking sheet with parchment paper. You can also use foil or non-stick cooking spray.
  • Make the apple filling. Combine the apples, sugar, cornstarch, and cinnamon in a small saucepan over low heat. Cook for about 5 minutes or until the apples just begin to soften. Remember, they will cook more in the oven!
  • Flatten and cut the puff pastry. While the filling cools, flatten and smooth out the puff pastry. Cut each sheet into 4 equal squares. 
  • Add the filling. Place about 1-2 tablespoons of the cooled apple filling into the middle of each puff pastry square.
  • Fold and seal the turnovers. Brush the edges of each turnover with the egg yolk. Fold them into triangles and crimp them closed with a fork. Then, brush the tops of the turnovers with more eggs. Before baking, cut a small slit into the top of each one to release the steam.
  • Bake and cool. Place the pan in the oven and bake the apple turnovers for about 15 minutes. Transfer them to a cooling rack when they are golden brown on top.
  • Make the glaze. Combine the powdered sugar and milk in a small bowl and whisk until smooth. 
  • Add glaze to the turnovers. Drizzle the glaze on the cooled turnovers and enjoy!

Tips and Variations

  • Don’t overfill the turnovers. Be sure to save enough room on the edges of the puff pastry so it can properly seal. If you have too much filling, they won’t close correctly and the apple mixture will leak while baking.
  • Allow the apple turnovers to cool. Make sure the apple turnovers are cooled before drizzling the glaze. Otherwise, it will melt and become a sticky mess.
  • Make them ahead. Prepare the apple filling for the turnovers and store it in the refrigerator overnight. This will save you time the next day.
  • Cook them in the air fryer. You can make these in the air fryer, too. Preheat it to 400 degrees F and check on them after 8-10 minutes. They’re ready when golden and crispy!
  • Try it with pears. Swap the apples for diced pears for a fun twist.

Storing

Place any leftover apple turnovers in an airtight container and store them at room temperature for 2-3 days. You can place them in the refrigerator as well.

Apple turnoverscan be stored in the freezer in an airtight container for up to 3 months. Do not add the glaze before freezing them. Thaw them in the refrigerator overnight and make the glaze when you’re ready to serve!

  • Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or grease with cooking spray and set aside.

  • In a small saucepan, mix together diced apple, sugar, cornstarch and cinnamon. Heat on low for five minutes, stirring occasionally until the apple begins to soften.

  • Allow to cool for a few minutes. Flatten out puff pastry until smooth. Cut each sheet into four equal squares. Place 1-2 tablespoons of apple in the middle of each square.

  • Brush edges with egg and fold into a triangle. Use a fork to press edges together then brush the tops with egg and cut a slit in the top to let the heat out.

  • Bake for 15 minutes or until the tops are golden brown. Remove from the oven and transfer to a cooling rack.

  • Mix together powdered sugar, milk and vanilla to make glaze. Drizzle over cooled turnovers.
