This is one of the best caprese bruschetta recipes I have ever made! Fresh mozzarella and basil are some of my favorite ingredients to work with, and they provide fantastic flavors for this bruschetta. There’s no real cooking involved beyond toasting the bread and melting the cheese, which is a super quick step.
Every time I make this for parties or special events, it’s a hit! There are never any leftovers. Even kids love it! I’m convinced the melty mozzarella draws them in, but can you blame them? I recommend using authentic extra virgin olive oil and balsamic glaze. It makes a huge difference in the flavor.

How to Make Caprese Bruschetta
This uncomplicated recipe gives you a tasty result in 15 minutes from start to finish.
- Preheat your oven to 450 degrees F and line a baking sheet with parchment paper.
- Slice the baguette and place the bread slices onto the prepared pan.
- Add diced tomatoes, basil, shallots, garlic, olive oil, salt, and paper to a large mixing bowl. Lightly toss together to combine and set it aside.
- Place one slice of mozzarella onto each piece of baguette.
- Bake for 5 minutes or until the cheese is melted and the bread is toasted.

This Italian caprese bruschetta is best eaten on the day it is prepared. It doesn’t store in the fridge well, and the bread can become soggy. I also recommend never freezing tomatoes. It changes the texture and makes it difficult to eat.
