Lime Fluff aka Seafoam Salad

Easy Seafoam Salad

I remember my grandma making seafoam salad when I was a kid. This classic recipe was either made with lime Jello or fresh lime (the way I like it). This was always a Southern Holiday side dish and requested every Christmas.

With fresh lime and vanilla wafers mixed with whipped topping, this also makes the perfect summer dessert. This is a no-bake dessert salad recipe that only takes a few minutes to prepare. If you love lime, this is a must-try. I have made other fluff salads before, and I love them. This one is no exception! It’s sweet, delicious and kid-approved, too. Make it for your next summer party to wow your guests.

Why You’ll Love This Lime Fluff

  • Only 5 ingredients. With just 5 items, you can make this creamy and tart lime seafoam salad.
  • Easy to make ahead. Since this recipe needs some refrigeration time, it’s a great dessert to make ahead of time.
  • Budget-friendly. All the ingredients are super cheap which makes this great for any size budget.

What You’ll Need

Here are all the ingredients you’ll need to make this sweet green fluff salad. While these are all easy-to-find ingredients, feel free to make simple substitutions when needed, like using graham crackers instead of vanilla wafers.

  • Lime: I use a combination of fresh lime juice and zest. I also like to garnish the finished fluff salad with extra lime zest for color.
  • Condensed milk: The sweetened condensed milk makes this dessert rich and creamy and adds the perfect amount of sweetness.
  • Whipped topping: For a light and airy texture, I fold in whipped topping. It makes the finished recipe fluffy and luscious.
  • Marshmallows: I love the chewy texture of marshmallows as it adds a different flair to the dessert.
  • Vanilla wafers: The crushed wafers mimic a pie crust and add crunch to the soft textures.
  • Green food coloring: This is an optional ingredient that you may add, but you may leave it out.

How to Make Seafoam Salad

Here are all the steps needed to make this lime fluff recipe. Once you mix all of the ingredients and let them rest in the refrigerator, they’re ready to devour!

  • Combine the lime and condensed milk. Pour the lime juice, zest, and sweetened condensed milk into a large mixing bowl. Whisk until well combined and smooth.
  • Add food coloring. If you are using green food coloring, this is where you would add it.
  • Fold in Cool Whip and marshmallows. Add the whipped topping and mini marshmallows and gently fold it into the lime mixture with a rubber spatula.
  • Chill. Cover the bowl and put it in the refrigerator for about an hour to set.
  • Top with crushed wafers. Sprinkle crushed vanilla wafers on top as well as lime zest or more whipped topping if you wish.
  • Serve. Scoop and enjoy!

Variations and Tips for Success

  • Try an electric mixer. If you prefer, you can use an electric hand mixer instead of a whisk for the first step.
  • Use key lime. Feel free to use key lime juice and zest instead of regular lime.
  • Don’t add the wafers too early. I like to wait to add the crushed vanilla wafers until right before you serve so they don’t become soggy.
  • Add texture. To enhance the fluffy texture, add nuts like chopped walnuts, pecans, or shredded coconut to the salad.

Storage directions: This lime fluff can be stored in an airtight container in the fridge for up to 3 days. You can also make it up to 1 day ahead of serving.
