  • Mess-free. The biggest downside to traditional s’mores is that they’re…well, messy! (My kids would argue that’s one of the reasons they’re so great.) These s’mores bars fix that problem and make the treat great for sharing.

What You’ll Need

This simple s’mores dessert is made with just 5 basic ingredients. Scroll down to the recipe card below for the exact measurements.

  • Graham cracker crumbs – You can make graham cracker crumbs by placing whole graham crackers in a food processor or by crushing them in a sealed plastic bag with a rolling pin.
  • Butter – To help form the crust.
  • Sugar
  • Hershey’s chocolate bars – Feel free to experiment with different types of chocolate, such as dark chocolate, milk chocolate, or even chocolate chips.
  • Mini marshmallows – If you don’t have mini marshmallows, you can use regular-sized marshmallows. Just cut them into smaller pieces or arrange them evenly over the chocolate layer.

How To Make S’mores Bars

  • Prep. Preheat the oven to 350F and grease the baking dish.
  • Make the crust. Combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into an even layer on the bottom of the baking dish.
  • Assemble. Break the chocolate bars into pieces and distribute over the crust then top with an even layer of mini marshmallows.
  • Bake. Bake for 10-12 minutes, until the marshmallows are golden brown and the chocolate is melted.
  • Cool. Let cool for 15-20 minutes then cut into squares and enjoy!

Tips and Variations

Here are a few things to keep in mind when making this easy s’mores bars recipe.

  • Press the crust down firmly. I like to use the bottom of a glass to help me press the graham cracker crumb mixture into the bottom of the pan. If you don’t press them down, the crust will be very crumbly and fall apart when you try to serve the bars.
  • Brown, don’t burn. Keep an eye on the marshmallows when baking as you want to achieve a beautiful golden brown color without burning them. (Basically like when you’re making s’mores for real.)
  • Use the broiler. If you want a darker brown char on top, you can pop these under the broiler but keep a very close eye on them. 60-90 seconds is usually plenty!
  • Cool before slicing. If you try to cut these as soon as they come out of the oven, you’re going to have an absolute mess as the chocolate and marshmallows will go everywhere. Wait until they’re just a bit warmer than room temperature before slicing.
  • Variations. Replaces the mini marshmallows with marshmallow fluff (marshmallow creme). Instead of Hershey bars, line with Reese’s peanut butter cups. Crush Golden Grahams cereal for the crust instead of graham crackers.

Serving Suggestions

These s’mores bars are best enjoyed slightly warm, so the chocolate is melty and gooey. Serve with a glass of cold milk or hot cocoa for a perfect pairing.

Proper Storage

  • On the counter. Store any leftover s’mores bars in an airtight container at room temperature for up to 3 days.
  • Reheat. Reheat in the microwave for a few seconds if you prefer them warm.

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

  • Remove the baking dish from the oven and let it cool for about 15-20 minutes. This allows the bars to set and makes them easier to cut.

  • Once the smores bars have cooled and set, cut them into squares and serve. Enjoy!
